Essentials & Tools
Scale – The single most important tool. Cups and spoons can vary, but a scale gives you consistency every single time.
Stand Mixer – Not essential, but a huge time-saver. A hand mixer works just fine if that’s what you’ve got.
Rubber Spatula – A must-have! Silicone spatulas will become your best friend—from scraping bowls to folding in delicate mixtures to making fruit butters.
Whisk – Perfect for whisking eggs and “sifting” flour (it aerates flour just like a sieve).
Core Ingredients
Flour – Stick with unbleached all-purpose.
Cornstarch – Lightens texture by reducing gluten. Don’t want to use it? Swap in cake flour instead for the weight of the all-purpose flour and cornstarch.
Eggs – Always use large, and bring them to room temperature (set them out at least 2 hours before baking).
Butter – Unsalted, room temp—same rule as eggs.
Oil – Any mild oil works here.
